Nomora’s alcohol-free wines are crafted through a meticulous process that includes dealcoholization via vacuum distillation, allowing us to preserve the aromatic complexity of the original wine.

The wines we start with come from grapes grown with sustainable, organic farming practices. now, EU regulations don’t let us certify dealcoholized wine as organic – but for us, it’s about quality and health over any label.

The Process:


Winemaking: The first step is making the base wine – and that happens just like it would for any wine: the grapes are fermented until their sugars are fully consumed, resulting in a wine with varying alcohol content, depending on the year and the variety.

Choosing the right wines is essential, as de-alcoholization can significantly alter the balance of aroma, body, and acidity. 

Like a champagne producer crafting their Cuvée, we have to anticipate how a wine will evolve once it is liberated from alcohol – so as to allow it to reveal its best qualities in a new and unexpected way.

Dealcoholization: The wine is gently stripped of alcohol through a vacuum distillation process. By removing the air during the process, we’re able to eliminate the alcohol at temperatures below 30°C, without altering the wine’s original characteristics. It’s a technique that has minimal impact on the wine’s original characteristics while also keeping energy consumption low, helping to make the de-alcoholization process more sustainable and reducing its carbon footprint.

Finishing touches: After dealcoholization, the wine can sometimes feel a bit "harder" – alcohol’s role is to smooth out any harshness, adding structure and density. But there’s a simple solution – we add a small amount of concentrated grape must. The final sugar content is similar to that of a Dry sparkling wine, ensuring a beautifully balanced alcohol-free wine.

At the end of the process, no artificial colors or flavors are used. 
For our sparkling wines, carbon dioxide is added after de-alcoholization, creating a modern effervescence with a signature fine perlage.
